Pancake Day the GOOD HEMP Way

Shrove Tuesday, or Pancake Day as it is known in the UK, Ireland, Australia, New Zealand and Canada is the day preceding lent where traditionally dairy, meat and eggs would all be given up for the next 40 days.  Pancakes are associated with this day as it was a chance for all of the rich ingredients that cannot be eaten during lent to get used up! A perfect excuse to eat pancakes if you ask me.

Here at GOOD Hemp, we have a few tips to make your Pancake Day even more of a success! By swapping your usual pancake ingredients for GOOD products you can add some real nutritional benefits to traditional pancakes and they will taste extra delicious!

By using GOOD HEMP Milk in your pancake batter instead of your usual milk or milk alternative, you will be adding lots of good things such as essential fatty acids including Omega 3, 6 & 9. It also contains calcium and has no cholesterol as well as being 100% natural and produced from hemp seeds grown right here in the UK. It is also great for cooking with as it does not lose any of its nutritional properties and will not split or curdle. Whats more, it  is excellent in sweet dishes such as pancakes as it has a creamy, nutty flavour.

  • Give it a rest…

By making your pancake batter in advance and then leaving it to rest and chill this will help to ensure your pancakes are of a better quality once cooked. Why is this you ask? During the resting period, starch molecules in the flour absorb the liquid in the batter. This causes them to swell and gives the batter a thicker consistency. Also, gluten in the flour will get a chance to relax meaning that your pancakes will have a soft, delicate texture instead of being chewy.

  • Be patient!

When cooking pancakes try and keep the heat low and don’t get too impatient when it comes to flipping! Whether you are cooking the traditional, paper thin French style pancakes or the American style thick version, wait until the pancake begins to form bubbles on the surface before you even attempt to flip it and risk breaking the delicate batter.

  • Choose the right toppings

Now that you have gone to all the effort of making sure your pancakes are going to be better for you by using GOOD HEMP Milk, why not make them even better for you and choose some healthy toppings instead of the usual lemon and sugar. Nut butters such as peanut or cashew are delicious topped with some sliced banana. You could also try some low fat cream cheese topped with some strawberries or raspberries. Another tip to help sweeten the pancakes is to use maple syrup instead of golden syrup as it is much healthier! You could also sprinkle over some GOOD SEED Sweet Cinnamon shelled hemp seeds to make your pancakes even healthier!

Now that you’ve seen all the handy tips, here is a delicious recipe if you’re feeling stuck for ideas!

GOOD HEMP Milk Blueberry and Lemon Curd Pancakes

Serves 4    Prep: 10 mins      Cook: 15 mins

Ingredients:

270g plain flour

2 tsp baking powder

½ tsp salt

2 tbsp caster sugar

270ml GOOD HEMP Milk

2 eggs, lightly beaten

2 tbsp melted butter, plus extra for cooking

120g fresh blueberries

100g lemon curd

 

Method:

  1. In a large bowl, sift together the flour, baking powder, salt and caster sugar.
  2. In a jug, whisk together the GOOD HEMP Milk, eggs and the melted butter.
  3. Make a well in the centre of the dry ingredients and pour in the wet ingredients. Whisk together until the batter is lump free.
  4. Stir in the blueberries and allow the batter to rest for at least half an hour in the fridge.
  5. Once the batter has rested, give it a quick stir and add the lemon curd. Swirl it through the batter but don’t mix it in entirely to give a marbled effect.
  6. Heat a non-stick frying pan over a medium heat and melt a little butter. Ladle the batter into the pan and leave the pancakes to cook until bubbles form on the top, flip over and cook for a further 2 minutes on the other side.
  7. Keep the pancakes warm in the oven while you cook the rest of them. Serve the pancakes straight away topped with syrup or more lemon curd.
